It’s monday again, a new week has started and it’s time to share a new recipe. This time I made something really simple, using only 2 ingredients, eggs and bananas. That’s how easy it can be, making yummy and healthy pancakes. All you need is 2 eggs and 1 banana! Put it in a blender until you have a smooth mixture. You can also add cinnamon, vanilla etc if you like. It gives a really good flavor to your pancakes. Put some butter or coconut oil on a medium warm pan. I prefer these two oils, as it can be very tricky flipping the pancakes, and I think that the oils you use play a big role in a successful “flip”. Also keeping the pancakes small is very important, as well as flipping them slowly. Give them about 1½ minutes on each side.
Serve the pancakes with fresh berries, honey or coconut. Just use your imagination!
