Recipe: egg muffins
Hi sweethearts! I thought that I would share an easy recipe with you this morning. So let me introduce you to the egg muffin. You have probably seen pictures of these bad boys on Instagram or other social media as they have become quite popular lately. I have been making these for years now, because it’s easy to make, it’s very filling and tastes delicious. The ingredients I use vary from day to day, as I use what I have in the fridge. As long as you have the main ingredient, which is eggs, you can mix them up with what ever you prefer, such as onion, peppers, tomatoes, bacon, cheese and so on. I’m going to share a basic recipe, so you can add what ever extra ingredient you would like.
Recipe – makes one serving:
- 2 eggs
- 1/2 a handful shredded cheese
- bacon, ham or chicken .
- salt and pepper
- vegetables of your choice
Whip the eggs together and then add the other ingredients. Put the mixture in silicone muffin forms and bake the egg muffins in the oven at 200 degrees for about 30 minutes (it depends on your oven, so keep an eye on the food while it’s baking).
These egg muffins are perfect for breakfast, lunch, brunch and dinner.
